Pasta Burro e Salvia
'Pasta burro e salvia' is a starter with cheese, milk and herbs. It's a quick and easy dish, because as the Italians know, the best meals are often the simplest. If you don't have a lot of time to make a meal, 'pasta burro e salvia' is perfect as a starter.
We often forget that with the simplest ingredients, we can prepare dishes that are every bit as good as the more complicated dishes. The 'pasta burro e salvia' is already tasty on its own, but if we add a good cheese and the right herbs, it will really elevate the dish. Salvia (sage) is a green plant that fits both winter and summer dishes. The plant is very easy to keep in a vase or a pot. It will live up to 5 years, so after 4 years, it's time to plant a new one. Every year, the plant will grow blue flowers that smell wonderful. It comes as no surprise that "salvia" means "sano": healthy. The plant contains a rich essential oil and has a therapeutic effect. Using a good "burro" (butter) is very important for your health and for the flavour of the final result.
The quality of the butter depends on the milk used and the way it is processed. Good butter is rich in calcium, milk proteins and Vitamin A. Using margarine as an alternative to butter is not a good option, however, you could use mascarpone.
Ingredients (for 4 people)
400 grams of pasta
1 tablespoon of mascarpone
100 ml of milk
50 ml of cooking cream
Chilli pepper
Sage
15 grams of butter
Salt and pepper
Preparation
1. Put the pasta in boiling water and add salt At the same time, add the butter and sage to a pan, lightly fry.
2. Add the mascarpone, milk and cream. Mix them, and let them cook on high heat for 5 minutes.
3. Add the boiled pasta, as well as the pepper and the chilli pepper.
4. Heat the sauce on high heat, keep stirring well.
5. It will be done within a couple of seconds. Turn the burner off and serve the dish!
